Swordfish steaks boast a meaty texture paired with a delicate flavor profile, and are optimally cooked to medium doneness—resulting in firm yet juicy flesh. (As with most proteins, overcooking can lead to toughness.) Instead of pre-marinating, this recipe employs post-cooking marination: The steaks are seared in a skillet until golden brown, then allowed to absorb a piquant pan sauce while still warm.
