Smoked Gouda and Broccoli Flatbreads

While this flatbread features equal proportions of cheese and broccoli, the smoked Gouda takes center stage with its distinctive character. The cheese’s buttery, subtly smoked profile is enhanced by scallions, which caramelize into a sweet, golden brown during roasting.

Preparation is expedited using store-bought flatbread, naan, or pocketless pita; however, given variations in bread size, adjust topping quantities to ensure full coverage. (Leftover toppings can be used to make a toasted cheese melt.)

Adapt the recipe to available ingredients: Replace Gouda with alternative melting cheeses such as Cheddar or fontina, and substitute broccoli with spinach, kale, thinly sliced Brussels sprouts, or another fast-cooking vegetable.
